Prep time: 20 min
Marinate time: 24 hours


What's needed:

  • 4 boneless chicken breast
  • Fresh Thyme - 15%
  • Fresh Parsley - 60%
  • Fresh Green Onion - 25%
  • 2 Cloves of Garlic/Minced Garlic
  • 3 tbsp Dijon Mustard
  • 4 tbsp Balsamic Vinegar
  • 1/4 cup Extra Virgin olive Oil
  • Lite pinch of salt and pepper



Your going to want about a 1/4 cup of fresh herbs, I gave a rough percentage above in the "What's Needed" section that should add up to 1/4 cups. As you can see, most of it will be fresh Parsley. You can substitute other herbs if you like. If you put in too much herbs, just add a little bit more oil and balsamic vinegar.

Finely chop up the Thyme, Parsley, and Green Onion and put them in a medium mixing bowl. Add the galick that should be minced. Add in the other ingredients and mix and let rest for 5 min. While that is resting, grab a ziplock bag and the chicken. I personally like taking a meat tenderizer and lightly hit the chicken breast to thin them a little but is not needed. Place the chicken into the bag keeping the as best as possible not overlapping each other. Pour the marinade in the bag and gingerly move it so it gets all around the chicken. flatten and get as much air as you can from the bag and zip it up. Place in fridge for 24 hours. I recommend flipping the bag at least once around half way through. So if you do the marinade in the evening, then flip it once in the morning and work the marinade a little.

When its almost time to cook, pull chicken from the fridge and let it sit for 30 min. Cook on the grill on low with marinade still on the chicken. Once done cooking, bring it in and slice it up, put over your salad done the way you like it. I recommend getting some  Balsamic Vinaigrette Salad Dressing, the Kraft one is pretty good and enjoy.

This is a great meal for those hot days that can be enjoyed by all.


I also like using some of the leftover green onion and parsley and add that directly to my salad. but thats just a personal taste.

Sounds tasty, but I think I would end up eating all of that myself....  what are the rest going to eat????

just a salad. It is really good. I been making it for years and I never had anyone not like it. Sometimes its good to make extra's because people have came back for more. I do recommend using the Kraft Balsamic Vinaigrette salad dressing for the salad that just tops off everything.
