Before I found this other way of boiling eggs they would be a pain in the ass to peel...

I have found the best way (in my opinion)to boil the perfect egg is to add water to the pan you will be boiling
your eggs in. Bring it to a complete boil, remove pan from heat, use a large spoon or friers spoon
and slowly add your eggs (room tempature) to the hot water. Place pan back on the fire and bring back to boil for 13
to 14 minutes...  Remove and run under COLD COLD water preferably adding ice for about 7 to 10 minutes...
let chill, then tap egg on counter to make a few cracks, then ROLL egg under the palm of your hand around
on counter top until total egg has been cracked (doing this is key!). Then peel! 99.9% of your boiled eggs will be intact,and perfect...
In times past my boiled eggs looked so hacked up they didn't look edible...  wink

Hello, That I have seen, but I found instead of rolling the egg, I just drop the egg from a inch or so off the counter and fracture the whole egg everywhere will produce the same effect. I do it that way because I have seen and experienced shell fragments sometimes poking out and they can be sharp when rolling. Essentially, they both work and do the same thing and about the same speed.

Why 13-14 minutes it only takes 6 minutes for a hard boiled egg so seems like a little waste
of time to me? Just thought I would ask.

Rule of thumb I always went by when I worked as a chef was only boil the egg for 10 min then shock them in ice water bath to stop the cooking.

At 6 min, (depending on the elevation your at), will have the yoke under cooked if you shock them with a ice bath. If your not doing a ice bath, then 6 min is enough and then just remove from heat and water, and let them air cook. That will finish the cooking process on their own.

But everyone does it differently.

Here if I boiled my eggs for only 6 minutes the yoke would not be cook entirely.
It would be a soft boiled egg... My point to my post was about peeling the shell
off and keeping it looking like a nice shaped egg.
