I am so not a gourmet cook and the recipe's online are not easy.

I don't want to do an entire turkey; just the parts but I don't want it to be bland.  Does anyone know of a really good recipe for spicing up turkey parts -- like the breast and wing?

Thanks -- no rush but would like some idea before Christmas though.

I really don't have a turkey breast  recipe. I usually cook it by eye and taste. Me, i am not once to like eating sliced turkey how traditional families do it on the holidays. Me, instead will just buy a couple of turkey breaks and roast it like everyone else does. But, once cooked I let it cool down and I cut it into chunks/small strips.

From there, I make almost like a "pot pie" gravy generally starting with a package or can of pre-made turkey gravy. Then I will add in some 'Birds-eye' mixed vegetables and cook that in the gravy. I will then add a little salt/pepper, Italian seasoning (you can find it at any grocery store), a pinch of sugar,  and I cook that down. Use the Italian seasoning liberal and only mix in enough until you like the taste. While cooking, I will add in some of the turkey drippings and if I need to thicken in, I do generally the (flour & water) trick, but corn starch works as well also.

(*Note: You can also use instant mash potatoes to help thicken, though be very cautious not to use too much.)

While the gravy/vegetable cook, I will mix in the chopped turkey into the sauce. Now, the mixture should not be like a soup, but more of a pot of mostly turkey and mixed vegetables with the gravy and then I make fresh mashed potatoes and I put the mixing on top of the mashed potatoes.

Overall, I make a semi spiced pot pie without the crust, instead put it over the mashed potatoes. (I don't like pie crust).

That is what I do and I love it and my friends and sisters/mother like it.
I am the cook of my family and always have. All my ex-gf always made me cook, and heck, I used to cook  for a living at several restaurants.

I'm not a very good cook and it probably won't taste all that great; but I'm going to try it out.  If it doesn't work out, I'll give it to the dog.
